Ingredients

  • 8 skinless chicken breast
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 Tbsp Olive Oil
  • 2 Medium Carrots, chopped carrots
  • 1 cup stemmed and quartered Cremini mushrooms
  • 1 Chopped onion
  • 3 cloves garlic, smashed
  • 1 Tbsp tomato paste
  • 2 cups cherry tomatoes
  • 1/2 cup pitted green olives
  • 1/2 cup thinly sliced fresh basil
  • 1/4 cup chopped fresh Italian parsley

Directions:

  1. Season the chicken breast with 1/2 tsp salt and pepper.
  2. Select Saute on high heat. Wait 1 minute and add the oil to the bottom of the pot.
  3. Add carrots, mushrooms, onions, and 1/2 tsp salt and saute for about 5 minutes until soft.
  4. Add the garlic and tomato paste and cook for another 30 seconds.
  5. Add the cherry tomatoes, chicken breast, and olives, stir well.
  6. Press the Cancel button to reset the cooking program, then select the Manual setting and set the cooking time for 10 minutes and High pressure.
  7. When the timer goes off, use a Quick Release. Carefully unlock the lid.
  8. Top with fresh basil and parsley. Serve.
