Ingredients
- 8 skinless chicken breast
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 Tbsp Olive Oil
- 2 Medium Carrots, chopped carrots
- 1 cup stemmed and quartered Cremini mushrooms
- 1 Chopped onion
- 3 cloves garlic, smashed
- 1 Tbsp tomato paste
- 2 cups cherry tomatoes
- 1/2 cup pitted green olives
- 1/2 cup thinly sliced fresh basil
- 1/4 cup chopped fresh Italian parsley
Directions:
- Season the chicken breast with 1/2 tsp salt and pepper.
- Select Saute on high heat. Wait 1 minute and add the oil to the bottom of the pot.
- Add carrots, mushrooms, onions, and 1/2 tsp salt and saute for about 5 minutes until soft.
- Add the garlic and tomato paste and cook for another 30 seconds.
- Add the cherry tomatoes, chicken breast, and olives, stir well.
- Press the Cancel button to reset the cooking program, then select the Manual setting and set the cooking time for 10 minutes and High pressure.
- When the timer goes off, use a Quick Release. Carefully unlock the lid.
- Top with fresh basil and parsley. Serve.
